- If using potato/carrot, boil until tender. Nom nom.
- Make an omelette. (Basically 2 or 3 eggs whisked together with a pinch of oregano and thrown into a pan with already hot oil swiped around the pan).
- Add ingredients according to whichever takes longer to cook! I.e. potato/carrot first
- Add the rest of your ingredients (beetroot, cheese, mushrooms etc).
- Remove from the heat before the base burns. Add some sauce if you fancy it - I used sweet chilli, but only because I'm obsessed with it. Tuck in!

Leftovers Frittata.
This is a good recipe for using up whatever you have left in your kitchen. For me this consisted of feta, half a potato and beetroot. A lovely frittata could include anything from a plethora of cheeses to different vegetables to cured meats (if you're not veggie like me!). Basically just throw in whatever you fancy!
